A summery pasta with artichokes and lemon
Summer is in full swing and the garden is a pure dream this year! So finally it's the season for long summer gatherings around the table and I'm excited to share a new recipe with you guys today!
Never have the roses in the garden looked more beautiful and wild than this year and I can't stop admiring their beauty every day right now. I can’t believe we planted them just 4 years ago and how quickly they just grew in all their wild beauty. This is my absolute favorite spot in the garden and we enjoyed this lovely little gathering with our dear friends and neighbors some weeks ago. Nora prepared this super tasty summer pasta with buffalo mozzarella, artichokes, lemon and our favorite olive oil from Gridelli and it’s needless to say that there wasn’t a single piece left over and everyone loved it :)

Looking at these pictures makes me all emotional as we just had to say goodbye to our beloved dog Collin last Sunday. Letting go of that incredible brave, curious and happy little soul was so deeply sad and yet I’m so grateful for all these years we could share with our special little Collin. I will never forget how we picked him up and he immediately ran towards us and wanted to come. It was definitely love at first sight. So it feels like these roses are just blooming extra beautiful for him right now.




Artichoke Pasta with Garlic Olive Oil from Gridelli
Ingredients for 4 persons
Roasted Artichokes
400g marinated artichokes (weight without liquid; store bought)
1 lemon
1 tbsp garlic olive oil from Gridelli
4-5 sprigs oregano
Pasta
400g Casarecce pasta (or any pasta of your choice)
60g pine nuts
500g green asparagus
4-5 sprigs oregano
200g Pecorino (or Parmesan)
3 tbsp garlic olive oil from Gridelli
1 tbsp lemon juice
150-200g olives of your choice
2 Burrata
Pesto
50g basil
30g sunflower seeds (preferably toasted in a pan before)
80g olive oil
1 tsp lemon juice
1 tsp honey
1 pinch salt
Preheat oven to 200°C/400°F top & bottom heat. Arrange the artichokes in an oven dish and sprinkle with garlic oil and lemon juice. Add a few lemon slices. Add a few sprigs of oregano and let roast for around 20minutes.
